
There is a reason you hear the words ‘seasonal’ and ‘locally sourced’ so often when it comes to cuisine. Far from simple buzzwords, these are terms that represent a commitment to quality cuisine and practices. Practices followed and reflected at our Lobby Bar via the delivery of a dining experience rooted in the thoughtful union of produce, tradition and quality honest fare.
We are fortunate to play host to a thriving kitchen-garden on our rooftop that delivers a direct conduit of fresh produce 365 days a year to the plates of Lobby Bar diners. This means when we talk about ‘seasonality’ and ‘locally sourced’, we really mean it – as many of the fresh ingredients have quite literally taken a brief seven floor elevator ride to land on your plate.
Our curated kitchen garden offers a rare opportunity for peak freshness for both diners and chefs, something our team capitalises on when developing menus, taking a ‘vegetable first’ approach and prioritising showcasing produce from our rooftop garden.
Given our menus are linked so closely to the changing seasons, like the garden itself, they are always growing and varying, mirroring mother nature’s bounty. There are however a few key menu items that are our go-to no matter the season including the ‘Summer Vegetable Salad’ which despite the name, is available year-round with the vegetables refreshed to reflect what’s growing on the roof at the time.
Alongside our flourishing sky-high veggie patch lives a colony of Calile bees, diligently creating the sweetest Calile honey perennially. Be sure to dip into this golden nectar served with the equally dippy ‘Baked Camembert’.
Locally sourced doesn’t stop at the roof however – if the team can’t dig it up, snip it off, or bottle in on our rooftop, they are working on sourcing produce from a network of trusted local growers and producers that place sustainable practices at the core of their business. Our tip is the ‘Market Fish’, sourced each day to capitalise on the daily catch.
We’d be remiss to not mention the beverage list too, with new cocktails on the mix, many featuring fresh rooftop herbs and ingredients. We have our own seasonal favourites: the spiced rum and honeycomb ‘The Apiarist’ is our preference in the cooler months; the peachy ‘Calile Spritz’ is our hot weather thirst-quencher; and ‘The Secret Garden’ is our spicy fusion of a Bloody Mary and Martini which is an essential year-round go-to.
